As well as a language, gastronomy tells us a lot about the culture to which it belongs. The dishes through ingredients and cooking tell us with flavors the history of the place where they are made, they speak to us without words of the traditions and customs that have the people who prepare and consume them. The food, in addition to satisfy us can go back and take us to know far away places in time and place.
In the kitchen of the Artieda´s hostel restaurant we want to praise the gastronomy of Aragon by preparing typical dishes and using ingredients that have been produced in this region, they have accompanied the life of its inhabitants for hundreds of years and make this a unique and delicious cuisine, however ; we also want those who stop to eat here, either for a special occasion, as part of the Camino de Santiago, after doing some of the activities that can be done around Artieda or simply want to try something different; can be transported and know through the palate another place in the world: Mexico. A place whose culinary culture is as big as its territory.
In our fires we mix recipes, ingredients, flavors and culinary techniques of both cuisines to create dishes that have their own identity and reflect the soul of the philosophy of Trails of Teja. We try to use fresh products from the area because we believe that favoring the local economy is of vital importance for them to develop and keep rural areas alive.
