Just like a language, gastronomy tells us a lot about the culture to which it belongs. Dishes, through their ingredients and cooking, tell us with flavours the history of the place where they are prepared, they tell us without words about the traditions and customs of the people who prepare and consume them. Food, as well as satisfying us, can take us back to places far away in time and place.
In the kitchen of the Artieda Hostel-Restaurant we want to praise the ingredients that have been produced in this region. Ingredients that have accompanied the lives of its inhabitants for hundreds of years and make this a unique and delicious cuisine. However, we also want those who stop to eat here, whether for a special occasion, as part of the Camino de Santiago or after doing one of the activities that can be done in the area around Artieda, to be transported and get to know another part of the world through their palate: Mexico. A place whose gastronomic culture is as big as its territory.
In our fires we mix recipes, ingredients, flavours and culinary techniques from different cuisines to create dishes that have their own identity and reflect the soul of Artieda’s philosophy. We have our own vegetable garden from which we promote food sovereignty. We try to use fresh, local produce as we believe that promoting the local economy is of vital importance for rural areas to develop and remain alive.
